Ingredients
- 1 cup unsweetened shredded coconut
- 1/3 cup coconut butter (softened)
- 2 T powdered allulose
- 1 T powdered monk fruit blend
- 1 ea Zest of 1 lime
- 1 T tablespoon fresh lime juice
- 1 T tablespoon melted coconut oil
- 1 ea Pinch sea salt
Instructions
- 1. Lightly toast shredded coconut in a dry skillet over medium-low heat for 3–4 minutes until golden. Let cool.2. In a bowl, mix coconut butter, coconut oil, allulose, monk fruit, lime zest, lime juice, and salt.3. Fold in toasted coconut.4. Chill mixture 15 minutes until firm enough to roll.5. Roll into 14 small balls.6. Optional: roll in additional toasted coconut.7. Refrigerate 30 minutes before serving.
Keto Chocolate Peanut Butter Mousse Parfaits

Ingredients
- 1 cup heavy whipping cream
- 2 tbsp powdered monk fruit sweetener
- 2 tbsp unsweetened cocoa powder
- ½ tsp vanilla extract
- 1 pinch Pinch sea salt
- 4 oz cream cheese, softened
- ¼ cup natural peanut butter (no sugar added)
- 2 tbsp powdered monk fruit
- 2 tbsp heavy cream
Instructions
- Make Chocolate Mousse:In a bowl, whip heavy cream until soft peaks form. Add sweetener, cocoa powder, vanilla, and salt. Continue whipping until thick and fluffy. Refrigerate while preparing peanut butter layer. Make Peanut Butter Cream:In a separate bowl, beat cream cheese until smooth. Add peanut butter and sweetener. Mix until creamy. Add heavy cream and beat until light and fluffy. Layer:Spoon chocolate mousse into small dessert glasses. Add a peanut butter layer. Repeat layers once more. Top with whipped cream or chocolate shavings. Chill 30–60 minutes before serving

- 1 Chaffle maker
Ingredients
- 2 eggs
- 2 tbsp almond flour
- 2 tbsp mayo
- ¾ tsp baking powder
- 2 tsp warm water
Mix and cook in mini waffle maker. (Makes 4 chaffles)
- 1 eggs
- 1 tbsp Swerve
- 1 tbsp cinnamon
Mix ingredients. Dip chaffles into mixture and fry in light butter in a skillet.
- 8 oz cream cheese
- ¼ cup Swerve confectioners sugar
Let cream cheese come to room temperature and mix thoroughly.
