Toasted Coconut Lime Energy Bites

Ingredients

  • 1 cup unsweetened shredded coconut
  • 1/3 cup coconut butter (softened)
  • 2 T powdered allulose
  • 1 T powdered monk fruit blend
  • 1 ea Zest of 1 lime
  • 1 T tablespoon fresh lime juice
  • 1 T tablespoon melted coconut oil
  • 1 ea Pinch sea salt

Instructions

  • 1. Lightly toast shredded coconut in a dry skillet over medium-low heat for 3–4 minutes until golden. Let cool.
    2. In a bowl, mix coconut butter, coconut oil, allulose, monk fruit, lime zest, lime juice, and salt.
    3. Fold in toasted coconut.
    4. Chill mixture 15 minutes until firm enough to roll.
    5. Roll into 14 small balls.
    6. Optional: roll in additional toasted coconut.
    7. Refrigerate 30 minutes before serving.
